When Jonny Diaz headed off to Florida State University in 2002 on a baseball scholarship, it looked like he'd follow in the footsteps of his brothers, who all attended college on baseball scholarships; his older brother Matt Diaz is currently the left fielder for the Atlanta Braves. But God had other plans.
Jonny has released his first label record, More Beautiful You, after 3 Indie projects. You've heard the title cut on K-LIFE.
But enough about music. Jonny shares a recipe for his favorite Texas Sheet Cake. Preheat oven to 400°Grease and flour ~16" x 11" baking sheet with sides In a saucepan: Melt 1 cup butter Add:
3 ½ TBSP cocoa
1 cup water Bring to a boil and remove from heat. In a separate bowl, combine:
2 cups of flour
2 cups of sugar Pour contents of saucepan into contents of bowl and beat well. In another bowl, beat:
2 eggs
1 tsp soda
1 tsp cinnamon
1 tsp vanilla
½ cup buttermilk Combine all ingredients and pour into baking sheet.
Bake ~20 minutes. ICING
In saucepan:
Melt ½ cup butter
Add:
3 ½ TBSP cocoa
1/3 cup milk Bring to a boil and remove from heat.
Stir in:
1 box (1lb) of confectioners sugar
1 tsp. vanilla
1 cup of nuts (optional - and Jonny doesn't like them!)
Ice while cake is still hot.
